When the scent of cinnamon, cardamom, anise, and caramelized apples fills the house, you know it’s applesauce time. Sweet, but completely sugar-free. Wonderfully fragrant, thanks to autumnal spices. And incredibly easy to prepare in the oven. This applesauce recipe is the only one you will ever need again.
Baked Applesauce
Hands-down the best applesauce you will ever have! Silky smooth and fragrant.
Ingredients
- 2-2,5kg apples
- 2 sticks cinnamon
- 1 star anise
- 5 cardamom capsules
- optional: 1 lemon
Instructions
- Preheat oven to 160°C (top/bottom heat) and prepare an ovenproof roasting pan with a lid.
- Wash the apples (peeling is not necessary), core them, and cut them into quarters or eighths.
- Place the apples in the roasting pan along with the spices and bake in the oven for 75 minutes.
- After 75 minutes, turn off the oven and place the lid on the roasting pan. Let cool in the oven for at least 90 minutes, or longer.
- Meanwhile, sterilize your glass jars.
- Once the apples have cooled, remove the cinnamon sticks and star anise and place the apples and their juice in a blender or puree with a handblender until smooth.
Optional: Season with lemon juice to taste.
Optional: Bring the applesauce to a simmer in a saucepan over medium heat. Pour the hot apples into the prepared jars and seal immediately. *
Notes
* the applesauce will keep in the fridge for 7 days. If poured in the jars hot and sealed immediately to form a vacuum, it will keep for several months stored in a dry and cool place.
