Who said pancakes are for weekends only? Naturally weekend breakfasts are perfect for extended family breakfasts, with the obligatory batch of pancakes or waffles, of course. However, if the reduced life of these past months taught me anything, it is to enjoy a slow and calm family breakfast 7 days a week! And, honestly, these easy, yet delicious pancakes come together so quickly, you won’t even notice it’s not your regular weekday breakfast routine.
But why do you need another pancake recipe? Frankly, most of the time, I just whip up my pancake batter as I go. But in this case, I thought it was worth to share a quick recipe with you my friends, as what makes these beauties special is the flour and, thus, I believe it’s worth adding it to your recipe collection. It’s Einkorn, my friends. Never heard of Einkorn? For the longest time of my life me neither. But over the last decade or so, I’ve been discovering alternative flours and have actually gone to use them much more than regular white flour in my cooking and baking. Why? You might ask. Well, that’s easily answered: I just love their richer, more distinguished taste. And that’s exactly what I love about Einkorn flour – it’s nutty taste. Apart from that it behaves pretty much like wheat flour, which makes it perfect for baking. And especially great for fluffy pancakes.
If that’s all you need to know to be sold on getting a package of Einkorn flour on your next shopping trip, then great! Jump right down to the recipe. If you want to know why Einkorn has become a constant in my kitchen, then keep on reading. Einkorn is considered an ancient grain, and unlike its sister regular wheat it has not been changed or altered much through breeding since the beginning of domestication. That’s why its considered to be easier digestible and it will not mess with your blood sugar level, like regular flour does. Research also shows that it’s higher in protein, Vitamin A and beta-carotene than regular white flour.
All of these reasons are also a plus when I think about feeding my little one. I want to give him food he loves and can enjoy. But above all, I want him to have a balanced and nutrient-rich diet. With these Einkorn pancakes I can do both! And he absolutely loves them, that’s for sure. Of course, I omit the sugar when I make them for him and I also don’t top them with strawberry jam & maple sirup 😉 Either way, I promise, they will make a pretty good start into the day!
