Is there anything that can make sweet, ripe strawberries even better? Yes! Cream. For this childhood favorite of mine, I macerated fresh strawberries with homemade Elderflower sirup. Making them even sweeter. Topped with a delicious curd-cheese cream with subtle hints of orange. These quick, and easy to make, dessert jars are a perfectly light treat for those first days of summer.
What makes this recipe special
I could eat berries by the handful. Most of the time I just take them like mother nature made them and they’re all gone before I can even start to think about making them into a dessert. But in this case, my longing for sweet red berries got the better of me and they weren’t as sweet and delicious as I had imagined. As it happened, I had just made a fresh batch of Elderflower cordial. So I simply poured a little over my strawberries and let them infuse in this fragrant, sugary liquid.
While the strawberries infused, I thought of my grandmother. She was the one who used to make elderflower cordial for all of my family and she’s also the one who passed her sweet tooth on to me. And like me, she almost never followed recipes. She simply followed her feeling.
And that’s exactly what I did when I created these delicious strawberry & cream jars. Maybe that’s what make them so irresistible. Or it’s the fact that they only take 10 minutes to prepare. In any case, it’s time to find out the specifics.
What you need to know
This recipe is so simple. I wasn’t even sure if I could call it a recipe to begin with. But then I remembered my grandma once more and her little recipe-post it’s. Most of them had only 4-5 lines written on them. A few ingredients and maybe measurements. The instructions were kept to a minimum. The power was and is in the creative freedom.
Below I gave you a recipe and amounts for 4 of these red and white jars. But please feel free to add a little bit here and there and go with your intuition. I’m sure it will guide you to your best strawberry & cream version.
Ok, loves! It’s time to let you go & leave you with the recipe.
And, as always, If you give it a try, make sure to leave a comment and/or 5-star rating and tag me on your creations @themellowkitchn over on Instagram. I absolutely love reading from you
