- 1 cup round-grain rice
- 2 cups coconut milk
- 2 cups water
- 3 teaspoons maca powder
- honey, agave sirup or maple sirup
- fresh, seasonal fruit
- Place the rice in a medium bowl together with the coconut milk and the water. Cover with a lid and bring to a boil.
- Once the mixture comes to a boil remove the lid and stir the rice. Let simmer for 15-20 minutes or until rice is tender, stirring occasionally.
- Add maca powder and a drizzle of your sweetener of choice and stir through. Serve immediately topped with seasonal fruits and more sweetener, if you like.
